Intro:
Turmeric is a powerful anti-inflammatory spice used in traditional medicine for centuries. Combined with protein-rich lentils and warming vegetables, this soup helps reduce inflammation and ease joint pain naturally.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tsp ground turmeric
  • 1 cup red lentils
  • 1 carrot, diced
  • 1 zucchini, chopped
  • 4 cups low-sodium vegetable broth
  • Salt & pepper to taste
  • Juice of half a lemon
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a pot over medium heat. Sauté onions until soft.
  2. Add garlic, ginger, and turmeric. Cook for 1 minute.
  3. Stir in lentils, carrots, and zucchini.
  4. Pour in broth, bring to a boil, then simmer for 20 minutes until lentils are soft.
